Meal Prep Broccoli Quinoa Salad
This week I’ve been talking a lot about mom overwhelm and strategies for managing the load that you carry.
Lunch is the meal that I meal prep for most often. The days get busy, whether you’re working, managing kids or enjoying outside life, lunch often needs to come together in 10-15 minutes and if there isn’t a plan, decisions aren’t always the best. And people get hangry. It’s okay - it happens to me too.
Enter this Roasted Broccoli Quinoa Salad.
The veggies and tofu roast up on one pan and you only need one other pot for the quinoa.
I make this up on the weekend and I know heading into the week that lunches are set for the week. What a feeling!
I add this salad to mixed greens with balsamic dressing and it’s *chef’s kiss*
Now let’s talk tofu.
This one is probably the food most people are intimidated by. But it’s so good and so easy to work with. You just have to push yourself out of your comfort zone.
Say it with me, “we don’t need to be scared of tofu!”
