SCRAMBLED EGG BOWL

Sounds simple right? It is.

If you know me, you know that I don’t have time for long, complicated recipes. I’m on-the-go pretty much all the time, so lunches (or dinners) like this are an absolute life-saver for me.

The best part about scrambled egg bowls is you can customize this to whatever you like, and it’s also a great way to use up any veggies in the fridge that might not be looking as hot as when you first bought them.

I see you wilting spinach.

Also…a healthy, filling, delicious meal that has protein, fibre, healthy fats, all the veggies AND it comes together in less than 10 minutes…I am in.

Here’s how to make yours:

  • Chop your veggies, whatever you’re into - mine most often includes peppers, onions, spinach, mushrooms and broccoli

  • Heat your pan over medium heat and add a tablespoon of avocado oil (olive oil would be another good option)

  • Sautee your veggies until they are tender - 5ish minutes

  • While veggies are cooking, whisk together two eggs - you can add a splash of milk if that’s your thing

  • Once the veggies are ready, add your eggs and stir occasionally until the eggs are firm and no liquid remains

  • Transfer egg and veggie mixture to a bowl and top with any of your favourites

    • Avocado - personal favourite

    • Hot sauce - another personal favourite

    • Salsa

    • Cheese

    • Everything But the Bagel seasoning

    • Anything you want!

There you have a 10 minute healthy lunch option that is going to keep you full, satisfied and load you up with veggies.
